Lasagna Stuffed Peppers

This recipe you will want to add to meal prep. When you take the ingredients and prepare beforehand it will be such a quick weeknight meal. It's a crowd pleaser that's for sure. My kiddos loved it.

Ingredients

  • 1lb extra-lean ground beef or whatever you prefer

  • 1 yellow onion, diced

  • 2 cloves garlic, minced

  • 1 jar pasta sauce ( I used Raos)

  • 1/2 tsp each salt & pepper

  • 2 cups spinach, chopped

  • 3 bell peppers any colour

  • 3/4 cup ricotta cheese

  • 11/2 cups mozzarella cheese, grated

Instructions

  1. Preheat oven to 400 F. Slice peppers in half and scoop out seeds/white piths.

  2. Bake 10 minutes, then remove from oven.

  3. In a large skillet cook the meat. Once it is cooked through add onion and garlic and cook for 3 minutes.

  4. Stir in pasta sauce and cook for 3-5 minutes. Add spinach and remove from heat. Add half of beef mix to pepper (about halfway) then a layer of ricotta cheese and finish with beef. Top with mozzarella cheese and bake for 12-15 minutes. Enjoy.

If you decide to meal prep them beforehand, you will want to add some additional cook time to make sure they are warmed all the way through.
