Ginger Beef Bowl

Ingredients

Coconut Rice:

  • 1 cup white rice

  • 1 can coconut milk

  • 1/4 cup water

  • Pinch of salt

  • Pickled Cucumbers

  • 1 large cucumber

  • 1/2 cup white vinegar

  • 1/2 tsp sesame seeds

Ginger Soy Beef:

  • 1 lb ground beef (or turkey/pork)

  • 1/2 cup soy sauce (or coconut aminos)

  • 2 tbsp honey

  • 2 tsp toasted sesame oil

  • 2 tsp cornstarch

  • 1 tbsp minced ginger

  • 3 large green onions

  • Olive or avocado oil spray


Instructions

1. Combine rice, coconut milk, water, and salt in a saucepan. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Let it rest for 10 minutes, then fluff.

2. For pickled cucumbers, slice the cucumber and mix with vinegar and sesame seeds.

3. In a bowl, whisk together the soy sauce, honey, sesame oil, cornstarch, and minced ginger.

4. Heat a skillet with oil spray, then cook the ground beef until done. Add the ginger soy sauce and allow it to thicken, then stir in green onions.

5. Assemble your bowl with coconut rice, ginger beef, and pickled cucumbers.
